Ingredients:
2 tsp of vanilla extract
2 tsp of baking powder
2 tsp of baking soda
1 tbsp of brown sugar
4 tbsp of Van Houten dark chocolate powder
1 cup of white flour (I'm using organic cake/pastry flour, but the ones sold in the grocery store would be fine too)
1 cup of soy milk (you can replace it with goat's milk if you wish)
125 gm of Philadelphia cream cheese (fat-free or 1/3 less fat)
Walnut & almond for decoration (optional)
Directions:
Preheat oven at 175 degrees Celsius for 10 minutes.
In a bowl, whip cream cheese until creamy. Mix vanilla with sugar and chocolate powder until it has been fully dissolved. Pour in the milk and sift the flour and fold. If it's sticky enough that it sticks to the spatula, it's time to pour the mixture into eight muffin cups.
Sprinkle walnut and almonds on top of it. Whack it in the oven for 25 - 30 minutes or until cooked at 160 degree Celsius.
Cool for 10 minutes before serving with a cup of coffee or a spoonful of sour cream.
Tip: If it's bitter, apply some sweetened fruit jam on it.
