Chewy and Nutty Banana Cake

I hadn't planned on being near the baking utensils and the ingredients anytime soon, but seeing that I have near-expiry crème fraîche stored in the fridge and soon-to-be spoilt bananas, I had no choice but to create something for tomorrow's breakfast.

I have been too lazy to search with Uncle Google cake recipes that would include the use of the above-mentioned items.



Dry Ingredients:
2 cups cake flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Wet Ingredients:
1/4 cup
crème fraîche
1/2 cup oil
1 cup Darjeeling tea (feel free to use liquid milk instead)
2 eggs
1 tbsp vanilla extract
6 bananas, roughly smashed

Other Ingredients:
1/4 cup chopped raisins
1/4 pistachio nuts, unsalted
1 fig, roughly chopped

Directions:

Preheat at 190C.
Grease a mold of your choice.
In a smaller mixing bowl, sift all the flour mixture and leave aside.
In another mixing bowl, beat eggs with oil and vanilla.
Fold in half of flour mixture.
Add
crème fraîche and tea before folding in the remaining mixture.
Throw in raisins, nuts and fig inside and fold once more, combining it with mixture.
Pour into (a) prepared mold(s).
For smaller molds, bake for 20 minutes at 180C but if for bigger mold, leave it in the oven for another 25 minutes at 130C.

  2. great use of going-to-be-bad-soon bananas! i must admit i'm not a fan of bananas in dessert (i prefer them on their own, so i usually say no to banana split ice cream, banana cakes, etc), but this sounds very tasty, especially with the addition of stuff like figs and raisins :D

    1. You're just like my Mom, Sean. She loves bananas on its own, but doesn't like it with ice cream whereas I love banana split.

      With the exception of creme fraiche, it can be considered as a healthy cake recipe as I've relied on figs and raisins for the sweet taste. =)

    1. Thank you, cquek. I wanted a break from table salt and table sugar; that's why I figured that the pistachio and raisins would provide a natural saltiness and sweetness to the cake.

      Taste wise, there's little trace of creme fraiche and it's infused with the taste of bananas. =)
